Gary pin bones and prepares each side of salmon for smoking individually in order to get the best results. After smoking and setting the salmon, he cuts it into fillets of varying sizes ready for distribution. 

Gary arrived in Switzerland from New Zealand in August 2020. He landed in the midst of a pandemic to follow his heart and dream of sharing his product with the world.

In New Zealand Gary is renowned throughout the country for his wonderful salmon (Stewart Island Smoked Salmon), sourced from the remotely southern Stewart Island. Locals and tourists alike would travel the great distance to enjoy both his company and cuisine.
